Just been out for a hours drive and the temp gauge only went up to quarter of the way , then on the way back the gauge was reading cold and then got a message saying that ac has been tuner off due to high engine temp. I stopped and checked the coolant levels but that seemed fine. Any advice would be great as I’m not too good with mechanics but if it’s a fairly easy fix will have a go myself as funds are a bit tight lately.

I would recommend you got it plugged on and see if any codes are present that's the best starting point.
It could be the thermostat at fault.
Knowing what engine you have would also help.
