I have a GTC sport with the small clocks, if I put clocks from an SRI in the sport would I be able to tech two all the other dash displays or would I have minimum add ons?

Tech2 no.

If you get a set of clocks they need to come from same engine car and be devoiced then programmed via MDI.

It's a 1.4t sport I have and was looking at clocks from a 2.0 cdti so that's a no then on that option

I found a set from a 1.4t engine so gonna see how easy it is to change them over

Do you not need to swap the chips over on the boards also to get the correct mileage displayed?, I know you had to do this on the corsas and the only way the mileage could be changed was by doing that or you had to buy new clocks from the dealer and get them to programme it

No the mileage is stored in multiple places on the J as long as they are devoiced from the donor car you just MDI via sps them (you can't tech2 them) and it puts the correct mileage on.
